Huw Foulkes - Pentrefelin Dairy

Hello, I’m Huw Foulkes — founder of Pentrefelin Dairy and the person behind the daily rhythm of life on the farm.

Pentrefelin has been in my family for generations. My grandfather and father farmed this land before me, and I grew up with the sights, sounds, and stories of a working dairy farm. Milking here stopped in 2005, and for a time the land was rented out — but I never let go of the dream of bringing cows back to Pentrefelin.

My Story

When the opportunity came to start again, I knew I didn’t want to return to the old model. People’s attitudes towards food and farming are changing — and that’s a good thing. I saw a chance to do things differently: to farm in a way that prioritises animal welfare, soil health, and real, nourishing food for the local community.

Pentrefelin Dairy began not with a ready-made herd or established system, but with a commitment to thoughtful, regenerative farming — where cows keep their calves, grazing builds biodiversity, and the food we produce tells the story of the land it came from.

 

Today, I’ve been running a cow-and-calf micro dairy for over five years. I bottle and sell milk directly to customers, raise calves alongside their mothers, and integrate grazing livestock into wider land stewardship. Alongside the dairy, I’ve developed pasture-based poultry systems, direct-to-consumer beef sales, and collaborate with organic growers and food producers here on the farm.

My experience now spans direct sales, milk sales compliance, pasture-based system design, and cow-calf herd management — with a strong emphasis on animal welfare, soil health, and community connection. I also support other farmers and food producers looking to transition towards more sustainable, localised systems — offering advice, practical insight, and collaborative opportunities through our wider work at Pentrefelin and LandLinked CIC.

A Family Farm Reimagined

Pentrefelin has always been a family farm, and it’s now evolving with the next generation.

My younger brother, Siôn Foulkes, is now spending more time here — playing a key role in how the farm grows and develops.

Siôn leads our pasture poultry enterprise, managing mobile flocks of ducks and hens that follow the cows in rotation — improving soil health, controlling pests, and producing exceptional eggs. He also works closely with Phil from Smithy Farm, growing organic fruit and vegetables using no-dig and regenerative methods right here at Pentrefelin.

Together, Siôn and Phil bring a huge amount of energy, skill, and knowledge-sharing to the farm — combining experience in agroecology, poultry systems, and market gardening to produce some of the best food you can buy, grown with care for people, animals, and the land.
